Winemaking process: Manual selection of the berries, temperature-controlled fermentation in stainless steel inox vats, classic method entirely produced in the Winery.
Refining/Aging: Hand made remuage, 60 months on its natural yeasts without dosage. At least 3 months in bottles after disgorging.
Food and wine paring: Fish main course grilled or baked, braised or roasted white meats, aged cheeses.
