Grape variety: Sangiovese.

Winemaking process: Manual selection of the grapes, medium maceration, fermentation in stainless steel vats at controlled temperature.
Aging/ Refining: 18 months in French oak barrels (5hl). At least 12 months in bottle.

Pairing: Roasted red meats, Fiorentina steaks. Aged pecorino cheeses (4-6 months).
