Vineyard location/ Type of soil: 150-200m above sea level. Red Mediterranean soil with abundance of stones.
Grape variety: Cabernet Sauvignon with a variable percentage of Sangiovese.
Alcohl content: 14%.
Grape Harvest: By hand with a careful selection.
Winemaking process: Manual selection of the grapes and of the berries, medium maceration, fermentation in natural concrete vats at controlled temperature.
Aging/ Refining: After the malolactic fermentation 12 months in French oak barriques of second and third passage.  At least 12 months in bottle.
Types of Bottle: 750 ml. – Magnum 1,5 lt – Magnum 3 lt.
Pairing: Roasted red meats, Fiorentina steak and Aged cheeses (4-6 mounths).
