Vineyard location/ Type of soil: 50 mt. above sea level. Red Mediterranean soil with Pliocene sands.
Grape variety: Viognier with a variable percentage of Chardonnay.
Alcohol content: 13,5%.
Grape Harvest: By hands with a careful selection.
Winemaking process: Manual selection of the grapes and berries, alcoholic and malolactic fermentation in French oak barrels.
Aging/ Refining6 months in Tonneaux (5hl). At least 12 months in bottle.
Type of bottle: 750 ml – Magnum 1,5 lt.
Pairing: Fish dishes, grilled fish, white meats and semi-aged cheeses (3 months).
