Vineyard location/Type of soil: 50 mt above sea level with Pliocene sands.
Grape variety: Trebbiano, Malvasia and Colombana.
Alcohol content: 12%.
Sugar Residual: 380-450 g/l.
Grape Harvest: By hands with a careful selection.
Winemaking process: Manual selection of the grapes, bunches are left to wither in dry rooms, soft pressing, in small oak barrels (100 lt) called “caratelli”, half-filled and closed with cement cap at least 10 years.
Refining/Aging: At least 12 months in bottles.
Type of bottle: 375 ml.
Food and wine pairing: Blue cheeses, Extra-Dark chocolate and dry pastries.
